Surface plot of scatter data X,Y,Z where unknown data is noise

Hello, need help with a surface plot of a RF data. Data comes in X,Y,Z vectors and I would like to plot it as a surface, I did a linespace and a meshgrid but dont want any interpolation of the missing data if I use the griddata function, because I know is just noise, thanks in advance
Edit: I guess my problem be how to create a 3D surface where the data points that I don't have in my Z vector can be assigned a noise value.

background RF white noise. So as an update I just did it through a for loop, checking if I have the Z point for each X,Y range and if not I assign it a random noise value. I know is not elegant but I could not find any other solution and I need it ASAP, regards :)

If you have a good handle on the noise-distribution you could do that. But for plotting purposes I would go for setting missing data to nan - that should be the most honest display of what you have.
