what is the significance of standard deviation in gray scale image?

It tells you how much variation there is in your image. The lower the value is, the more uniform it is, and the higher the value is, the more variation there is in the image intensities. But that's so trivial, I'm not really telling you anything you don't already know, am I? So then I guess I don't really know what your angle is. What's the real question?
