I would like to do GPU programming. Are there any GPU which is compatible both with MATLAB and a MacBook (any kind of MacBook version)?

An older line of MacBook Pro has the NVIDIA GTX 750M which is compatible with MATLAB. They don't make them any more but you might be able to find one.
Alternatively, get a newer MacBook with USB C and Thunderbolt support, buy a Razer Core enclosure and stick an NVIDIA GPU in it.

USB C is the connector, Thunderbolt is the communications protocol, you need both to support the Razer Core. There used to be Mac Minis and Mac Pros with NVIDIA cards in but these days Macs only have AMD or Intel.
Yes, MATLAB only supports NVIDIA GPUs for compute.
