3d fit greater than poly55

Hi there -
If we are doing a fit in the script, how can we have a fit that is greater than 5?

[sf,gof] = fit([Cx, Cy],Cz,'poly55','Lower',LowerList,'Upper',UpperList)
The above is what I am using and I'd like to have a 'poly88' or something else instead. Do I have to use my own formula?
