How can I change the default output format in Publish? I am in an academic environment and want to publish to a .pdf (vs html). Versus do it everytime I log in, can I change the default output?

You will have to ask MathWorks. I can’t find any way of changing its defaults (for example like changing the graphics defaults as discussed in Default Property Values).
Undocumented MATLAB doesn’t discuss the publish function, and publish exists in P-code, so it’s not possible to edit it to change anything within it.

You can change [Edit Configurations] options... to publish in pdf as a default instead of html.

Misunderstanding.. I teach MATLAB, and I know how to change the default when I open MATLAB. I want MATLAB to default to .pdf output (instead of html) without going in and changing it each time.
