xlabel('$L_{{(ex)}_L}$','fontweight','bold','FontSize',20,'Interpreter','latex');

You can escape the underscore
xlabel('$L_{{(ex)}\_L}$','fontweight','bold','FontSize',20,'Interpreter','latex');
