when you use help on any function, MATLAB gives you a description of how that particular function works. Is there any way to see the actual code portion of MATLAB built-in functions and M-File function?

I don't know if this helps, but most of the time, there are examples at the bottom of the help section of that particular function. You could try and execute them, and then step (in) line by line.

Not all functions are provided with the .m source code. But you can always try, e.g.
edit xlswrite.m
