Is there any way to export the data cursor information to an excel sheet rather than to the command window?

If you can get data to the command window, then you can use XLSWRITE to bring it to Excel.

I don't understand. In the command window I simply need to type: cursor_info.Position I tried the following in my gui and it doesnt seem to work: strfil=strrep(handles.sig_file,'.txt',''); xlswrite(strfil,cursor_info.Position,'A1'); It says the following error in the command window: undefined variable cursor_info

Try
xlswrite(strfil, evalin('global','cursor_info.Position'), 'A1')
