You are looking on the wrong documentation page. You are looking at http://www.mathworks.com/help/symbolic/mupad_ref/solve.html when you should be looking at http://www.mathworks.com/help/symbolic/solve.html
The only difference between the answer you are being presented and the answer in the example is in the visual presentation. The documentation page you are looking at is the page for running the Symbolic Toolbox within a MuPAD notebook: MuPAD notebooks know how to visually represent answers that the solve() you are actually using has to resort to text to display.

Give the command
notebook
and use the interface that shows up there.
Note: the MuPAD language does not use "sym" or "syms" and uses := for assignment rather than = by itself. MuPAD syntax is sometimes similar to MATLAB syntax.
MuPAD underlies MATLAB's symbolic facilities, but MATLAB translates syntax and calls when passing in to MuPAD and when getting results out.
