- You can write a script, which finds all the scopes in the model, and changes the settings which you want programmatically
- Can create your own library with the customized scope and then use it in future. Please refer to the following documentation: http://www.mathworks.com/help/simulink/ug/creating-block-libraries.html

How can I change the default settings of simulink scope. I understand individual scope style (background/line,axes,logging defaults) can be updated manually. I'd like to make these settings default, so that I do not need to enter the same settings several times in future designs.

This functionality is not available in latest release of MATLAB R2014b. There are couple of workarounds I can think of:
