How do I access MATLAB without a GUI when SSO requires that I log in with my university credentials?

MATLAB R2023b and newer can be accessed on a machine without a GUI/display using a one-time password (OTP). After launching MATLAB on a machine without a GUI for the first time, you will be prompted for your email address and one-time password.
After logging in with your email address and one-time password, you will not be prompted to log in again until the license expires or your operating system user profile is cleared.
