I wanted to download Matlab 2019or 2021 or 2020 for my macOs monterey 12.6 but the dropdown is stucked at 2024. I can't see other version to download from the website. Any solution to this

There is a button that allows you to download previous releases. On the upper right of the page as I recall.
HOWEVER, it also looks like the oldest release I saw that supports Monterey is R2022a. (Note that if I look at the previous release, R2021b explicitly does not list Monterey as one of the supported OS versions.)
Wanting to download an older release on your OS will likely cause problems. It may work acceptably for you, with only random crashes and problems, etc. Not being supportred does not mean a complete failure, but it will surely have some significant issues. There is always a good reason why they stopped supporting the older MATLAB releases on some versions of an OS.

If the dropdown is stuck at R2024a then you are not logged in as a licensed MATLAB user.
(Or possibly you are a student user and your university has restricted downloading MATLAB; if so then you would need to ask your university IT to make the older release available to you.)
