Can you solve the problem with 4 inputs and 1 output? I hope so. Just use backslash.

Then solve it 8 times. WTP? Loops are not always a bad thing.

In fact, backslash is effectively vectorized for you already, in that

   coefs = inputs\outputs;

actually solves the problem you asked about.
