GUI and matrix

when i run my gui and do my compression (image)
there is no matrices in the part of the workspace
matrix ex: dct

This is common. Variables are created in the workspace of a function, and that workspace disappears when the function exits. Please see http://matlab.wikia.com/wiki/FAQ#How_can_I_share_data_between_callback_functions_in_my_GUI.3F
