FLIR Spinnaker configuration (ImageFormat and FramesPerSecond)

I'm building a MATLAB based applictation which uses a FLIR (PointGrey) Blackfly S 3.2MP USB3 camera. I've found the extra toolbox for Spinnaker provided by MathWorks, but I'm missing some key features: ImageFormat and FramesPerSecond.
When using the toolbox I can only use the camera at 1024x768 resolution (instead of full 3.2 MP). Furthermore, I can't set the frames per second so the camera runs at full ~120 fps. Both these features are crucial for my application. Is there any way around this?
If not, would I be able to access these features if I swap my USB3-camera for the equivalent GiGE-vision type?

Unfortuantely any FLIR Camera that only supports the Spinnaker SDK will have limited functionality currently. Simply swapping to a USB3 one will not make a difference.
