Logging of a calculation process as a .txt file

Hi guys
I am running a long calculation process which sometimes outputs a string, using disp(), in order for the user to keep track of how the process is running. I would like to save these strings continuously to a single .txt file for later reference. I.e.: something like:
[Time] Process started
[Time] Process at 10%
[Time] Subroutine successfully initiated
etc...
How would I best go about doing this?

Full disclosure: This is my own library. But I think it's nicer and more powerful than the existing alternatives.
