colored elevation map from STL file

Hi everyone,
I'd like to vizualise the distorsions in a welded plate.
I scanned with Alicona the surface of the plate and I got a STL file (and the corresponding .txt file with coordinates).
I don't know how to get a colored elevation map from this STL file. To be clear, I'd like to obtain something like that:

Do you know how to do it in matlab?
