I am writing several programs that will need to run on multiple computers with different OS versions i.e. XP, win 7 32 bit and 64 bit. My question is how do I package this up? Do I include multiple MCR versions or do I just use he 32 bit version? Can I include multiple MCR's.

You can just produce a 32 bit version (which will work on all the systems you mention), or you can produce two versions, one for 32 bit and one for 64 bit.
Remember to take into account that the MATLAB release you are generating the code with must itself be "supported" on the target operating system in order for MCR to work with the target operating system.
