I'd like to know if there is going to be an iPad app released at any point? I've tried the iPhone one but its just too inconvenient.

I maybe a bit late on this question, but MATLAB it is available for the iPad from few releases. You can get more information here http://www.mathworks.com/products/matlab-mobile

MATLAB Mobile is a connector application that allows you to reach MATLAB, rather than being MATLAB itself. And it has a lot of restrictions on I/O.

MathWorks has a general policy of not discussing future products or features.

I have yet to see any volunteers here from Mathworks Sales department.
Questions of what might or will be coming in the future are generally handled on a need-to-know basis, based upon commercial analysis by the Sales Department. The technical people and even the product managers are usually not permitted to reveal these matters, or at most permitted to admit that the matter is being worked on but with no promise of delivery at any time.
I think it likely you would see the remote connector far sooner than you would see MATLAB implemented on the iPad itself.
