Plotting in semi-realtime

I'm putting together a GUI containing multiple time-dependent plots. I want to take data that has already been collected and allow the user to control how fast it is displayed on the graphs. Effectively, I want the user to be able to control time with stop, start, FF, and Rewind (though Rewind is not so important).
How do I control how fast MATLAB performs commands?

pause(delay_time)
That's likely what you're looking for.

Would that have to be done within a loop, so I could pause a certain amount of time between each iteration?

You can use a timer to perform changes with a specified rate:
doc timer
