I will keep it concise so as not to go into an off-matlab area. Curve fitting (commonly associated with regression) usually comes into play when you need to estimate a vector of values y as a function of a vector or multiple vectors of values x. The simplest way to get started is to use the cftool command. Feed your vector x as 1 parameter and your vector y as another, then experiment with the various curves that are available built in to the tool. If you have more x vectors than 2, then you need a more elaborate scheme. I would suggest looking into the regress function if you have the toolbox. Also check matlab file exchange for various implementations of curve fitting an regression, including one from your's truly for somewhat elaborate polynomial fits.
