How do I choose 256 or 0 values from my image?

I = imread('sos.png');
BW = imbinarize(I);
figure
imshowpair(I,BW,'montage')
I have this code so far, my mission is to get values of sos.png so I can change them to signals. I need to know how to select them.

You already have the values of the image. They already are signals. They already are in the range of [0 255]. You never said what you want to "select" or what "select' exactly means. Depending on what "select" means, it may be a 50% possibility that you already have that already as well.
