how to open mat file

I have a .mat file which is supposed to contain data for being able to plot the air pressure in lungs vs time, as well as a few other x vs y plots.
So when I double click the .mat file, there are a list of variables that pop up into my workspace. After this I'm not sure how to interpret these in order to create the plots.
Am I supposed to write a routine in order to open/create the plots?

A funny question. Why do you assume that we can guess, what you are supposed to do, when you do not know this by your own? Please consider, that we have even less information about the problem than you.
Ask the person who provided the file or who asked you to solve the problem.
