I have fetched the process id using: TASKLIST /FI "IMAGENAME eq MATLAB.exe", which gave me a number(5684).
Now I am in need of accessing the workspace variables of this particular MATLAB instance from the Command Prompt.

No, there is no way to do that. There is no way to get at the workspace of any independent matlab session.
Historically the closest to that was pmode https://www.mathworks.com/help/parallel-computing/pmode.html but that has been removed as of r2023a
