MATLAB supports Arduino boards (including UNO R4 WiFi) through the MATLAB Support Package for Arduino Hardware. Refer to this documentation https://www.mathworks.com/help/matlab/arduinoio.html. You can interface with sensors using analog/digital pins or protocols like I2C/SPI.
