how can learn image processing from the beginning

While learing image processing requires the reading of text books and/or listening to a course in the university, learning how to use Matlab's Image Processing Toolbox is explained in the corresponding "Getting Stared" chapter in the documentation. Did you read this already, specific questions can be asked in this forum.
