Dear Coder, I have do search on the net, however I cannot find any reference whether we can change the CELL Header into something like newName instead of the default number.
Really appreciate for any feedback.

What is "the CELL Header" ?
I searched the MATLAB documentation for "cell header" but did not get any results that obviously relate to your question.

You may need to provide more information about what is a CELL Header. Which product is this relevant to?
Matlab has a cell array data type. This has no header.
thisisacellarray = {[1 2 3 4], 'aabbcc'; datetime, 1i+5}

I suspect you might be talking about the column numbers in the variable browser, asking if the numbers can be replaced with words.
If I am correct, then No, you cannot do that directly.
However, you might be able to use array2table() to create a table() object. You can then do things like
t.Properties.VariableNames(1:3) = {'year','month','day'};
Now when you openvar('t') then the variable names will be shown at the top of each column
