The attached imag shows what appears to be a great feature where you can search tabs when you have a lot open.
However, I can't figure out how to get to it without using the mnouse. Can anyone tell me how to use keyboard shortcuts to search open tabs?

ctrl+pagedown will do this for you.

You could try typing "preferences Keyboard.Shortcuts" in the command window to see all keyboard shortcuts. It seems to me that there is not currently an existing one to do exactly what you are looking for, unfortunately.

Already been down that route too. I can't find the option that corresponds to the tab search in preferences, so I think you're right. I don't think matlab supports this right now.
