you could just reshape the matrix and then index it by column:
reshape(1:6,2,3)
ans =
1 3 5
2 4 6
or transpose that if you wanted it by rows

Try this
x=1:6;
y = reshape(x, 2, [])'
You'll see
y =
1 2
3 4
5 6

or this :
x=1:6;
k=1
y1=[x(k) x(k+1)];
y2=[x(k+2) x(k+3)];
y3=[x(k+4) x(k+5)];
y= [ y1 y2 y3]
or
y= [ y1 ; y2 ; y3]
