I am unable to see the Coverage Option under Analysis menu even though I have the Verification and Validation License checked out.
Could you please let me know of the reason?

Verification and Validation is not the correct license for Simulink Coverage. In Simulink R2017b, Simulink Verification and Validation was split up into three products with three different products, which are Simulink Check, Simulink Coverage, and Simulink Requirements. Simulink Coverage license is required in order to use the Coverage Option.

For more information about the Simulink Verification and Validation transition please see this page:
If you are using RMI (Requirements Management Interface) for requirements traceability or model / generated code coverage capabilities with R2017a or earlier of Simulink Verification and Validation product then Simulink Check is required to use these capabilities. Simulink Check retains the license feature from Simulink Verification and Validation and allows for usage on older releases before R2017b.
