How to extract the noise amplitude from a signal (Voltage) ?

I am looking for a methode to get the noise ( amplitude differences ) from the original Signal ( a voltage simulated with Simulink ) , ist there a Filter that save the noise variation? I tried to use SNR in Matlab but i needed the Power of each seperately which i dont have. Thanks in Advanced
