Hello ! I have this simulink model. How can I find the states variables using matlab/simulink?

What do you mean by “find the state variables”? What exactly are you trying to find?

It looks like the Simulink model is that of a linear time invariant (LTI) system. If that is the case one can use linmod to get the state space model, which will include the equations you seek
doc linmod
If the model is not LTI, I'm unaware of any way to determine the underlying differential equations from the block diagram.
