I would like to find the version of MATLAB without having to launch it. Also, I may have multiple installations. How can I determine the version of each installation without launching MATLAB?

To check the version of MATLAB without launching it, open a command prompt or terminal and type the following command:
matlab -help
This will output a list of MATLAB's command-line arguments and the version number will be displayed at the very end. This version number will correspond to the version of MATLAB that appears first on the system path.
In the case of multiple MATLAB installations, you must execute the command in the bin directory of each installation path.
