There are many good books of Image processing using Matlab. For example https://www.amazon.com/Digital-Image-Processing-Rafael-Gonzalez/dp/013168728X besides, I could buy some projects to explore Image Processing quickly. Such as: CD MATLAB CODE - 30$

Image Analyst may have some specific recommendations, but the compendium is in Image and Video Processing Books in the MathWorks Academic section.

Here's a free online book: http://szeliski.org/Book/
There are lots of other university courses whose slides can be found online. For example at MIT, or this, or this, or this, etc.

Get a good one on the general concepts, and a good one on the specific implementation possibilities in MATLAB language: The author "John C. Russ" writes excellent books about the topic of Image Processing and I can highly recommend them for understanding image processing concepts and image analysis solutions in general. However, as his books are not targeted specifically to MATLAB, but are much more general and detailled about the topic, you might want to also get an introduction of how to get image processing tasks done in the MATLAB language, then. For the latter I recommend you to accompany the Russ book with the already by ImageAnalyst mentioned book "Digital Image Processing Using MATLAB" from authors "Gonzales, Woods, Eddins".

Yes I agree. The Russ book is one of the best, if not the best, introductory book.
